Mascarpone frosting

If you want to elevate a dessert to the next level, I highly recommend this frosting. Combining cream cheese and mascarpone cheese provides a depth of texture and flavor that rarely compares to any other frosting out there. The whipped cream, in contrast, takes away a little bit of their heaviness and, that’s an important point: you won’t have to use cups upon cups of sugar, so it’s not too sweet.

Also, this frosting will taste fabulous but it is also super easy to make! What more could you ask for?

Mascarpone frosting

ingredients

  • 1 pkg (8 oz) cream cheese, room temperature

  • 1/2 cup mascarpone, room temperature

  • 1 1/4 tsp almond or vanilla extract

  • 1/2 cup powdered sugar

  • 2 1/2 cups heavy cream

directions

  1. Using a stand mixer with the whisk attachment, whip the heavy cream on high speed, until thick and fluffy. About 2 minutes. Be careful not to over whip! The cream should not be so thick that it looks like butter.

  2. Transfer the cream into another bowl and store it in the refrigerator.

  3. Back to the stand mixer, combine the cream cheese with the mascarpone. Mix for 3 or 4 minutes, until well combined.

  4. Add the almond or vanilla extract. Mix until incorporated.

  5. Add the powdered sugar and mix until well combined.

  6. Fold the refrigerated whipped cream into the cream cheese/ mascarpone mixture. Since this step is delicate, use a spatula, or use the stand mixer at low speed.

  7. Frost cake as desired.

Variations

After I decorated my cupcakes, I still had quite a bunch of leftover frosting. I didn’t want it to go to waste so used it to make a simple tiramisu. Dip a few lady fingers in good espresso coffee and line them in a dish. Spoon a generous amount of mascarpone frosting on top and spread it out over the lady fingers. Then, repeat: dip lady fingers in coffee, line them over the frosting, and spread the frosting on top, until you’re out of frosting or lady fingers. To make your tiramisu extra pretty, sift e generous amount of coca powder on top!

I have also used this frosting in fruit pies : fill the baked pie crust with this mascarpone cream and top with a abundance of fruits! It’s so simple yet fresh and delicious.
